08 - 1 1/2 tsp ground cinnamon

09 - 2 cups vegetable oil
# Directions:
01 - In a medium saucepan, combine water, unsalted butter, granulated sugar, and salt; bring to a boil over medium heat.
02 - Reduce heat to low, add all-purpose flour at once, and stir vigorously with a wooden spoon until dough forms a ball and pulls away from the sides (approximately 2 minutes).
03 - Remove from heat and let rest for 5 minutes to cool slightly.
04 - Add eggs one at a time, beating thoroughly after each addition until the dough is smooth and glossy.
05 - Transfer dough to a piping bag fitted with a large star tip.
06 - Heat vegetable oil in a deep pan to 350°F (175°C).
07 - Pipe 1-inch dough portions directly into hot oil, cutting each with scissors; fry in batches, turning occasionally, until golden brown (2–3 minutes).
08 - Remove churro bites with a slotted spoon and drain briefly on paper towels.
09 - In a shallow bowl, mix granulated sugar and ground cinnamon; roll warm churro bites evenly in the mixture.
10 - Serve immediately, optionally with chocolate sauce for dipping.
