Classic Meatloaf Mashed Potatoes (Printable)

# What You'll Need:

01 - 1.5 lbs ground beef (80% lean)
02 - 0.5 lb ground pork
03 - 1 medium onion, finely chopped
04 - 2 cloves garlic, minced
05 - 0.75 cup breadcrumbs
06 - 2 large eggs
07 - 0.5 cup whole milk
08 - 2 tbsp ketchup
09 - 2 tsp Worcestershire sauce
10 - 1.5 tsp salt

12 - 1 tsp dried thyme
13 - 1 tbsp Dijon mustard

14 - 0.33 cup ketchup
15 - 2 tbsp brown sugar
16 - 1 tbsp apple cider vinegar

→ Mashed Potatoes

17 - 2 lbs russet potatoes, peeled and cut into chunks
18 - 4 tbsp unsalted butter
19 - 0.5 cup whole milk, warmed
20 - 0.25 cup heavy cream (optional)
21 - 1 tsp salt
22 - 0.25 tsp black pepper

# Directions:

01 - Preheat oven to 350°F. Line a 9x5-inch loaf pan with parchment paper or grease lightly.
02 - Combine ground beef, ground pork, onion, garlic, breadcrumbs, eggs, milk, ketchup, Worcestershire sauce, salt, pepper, thyme, and Dijon mustard in a large bowl. Mix gently until just combined.
03 - Form mixture into a loaf and place in prepared pan.
04 - Mix ketchup, brown sugar, and apple cider vinegar in a small bowl. Spread half over the meatloaf.
05 - Bake 45 minutes. Remove from oven, spread remaining glaze, then bake an additional 15–20 minutes until internal temperature reaches 160°F.
06 - Place potatoes in pot and cover with cold salted water. Bring to boil, then simmer 15–20 minutes until tender.
07 - Drain potatoes; return to pot. Add butter, warmed milk, heavy cream if using, salt, and pepper. Mash until smooth. Adjust seasoning as needed.
08 - Let meatloaf rest 10 minutes before slicing. Serve with mashed potatoes.
