01 - 14 oz smoked sausage (kielbasa or andouille), sliced into 1/2-inch rounds

03 - 1 red bell pepper, diced
04 - 1 green bell pepper, diced

06 - 1 cup long-grain white rice, rinsed
07 - 2 cups low-sodium chicken broth
08 - 1 can (14 oz) diced tomatoes, undrained

11 - 1/2 tsp dried oregano
12 - 1/2 tsp salt, adjust to taste

# Directions:
01 - Heat a large deep skillet or Dutch oven over medium heat. Add sliced sausage and cook for 3 to 4 minutes until browned. Remove sausage and set aside, leaving rendered fat in pan.
02 - Add diced onion and bell peppers to the skillet. Cook for 4 to 5 minutes until softened.
03 - Stir in minced garlic and cook for 30 seconds until fragrant.
04 - Add rice, smoked paprika, thyme, oregano, salt, black pepper, and cayenne if using. Stir thoroughly to coat rice with spices.
05 - Pour in chicken broth and diced tomatoes with juices. Stir to combine.
06 - Return browned sausage to skillet. Bring mixture to a boil, then reduce heat to low. Cover and simmer for 18 to 20 minutes until rice is tender and liquid mostly absorbed.
